Growth

OK.  So one tomato does not a green thumb prove.  But, so far this plant has been doing REALLY well, and I'm hopeful that we'll have enough tomatoes for a couple of good salads this summer.  Maybe even a tomato tart!   How are your veggie plants doing so far?  Do you have a favorite tomato recipe?  Please share!

So's that Tomato Tart recipe. I've added it to my favourites for when our tomatoes ripen and we have a glut (*wishful thinking :o)*).

I spied our first courgette yesterday. -In fact that's just reminded me, and I'm gonna nip out and photograph it right now :o)

I LOVE tomatoes! Tomatoes in salads, tomatoes with mozzarella and basil, tomatoes in soups and stews, tomato on a toasted bagel with cheddar cheese and basil, tomatoes with and on anything! I'm starting to sound like Bubba from Forrest Gump, haha. Your tomato tart recipe sounds delicious. I'll definitely have to try it.

We don't have any home grown veggies, unfortunately, but maybe next year on our new balcony. :-)

Tomatoes are definitely one of my all time favorite foods. I hate to compete with you, but they say Jersey tomatoes are the best! Our tomato plants are getting quite tall, and there are a few wee little green ones hanging around. I can't wait. I especially enjoy grape tomatoes.

I've got a great recipe for grape tomatoes (I suppose you can use cherry tomatoes if you wish). Ready? Here it goes:

Ready a large pot of boiling water with penne pasta (about 1/2 box). In a separate pan, saute 3 cloves of garlic in olive oil. Add about a pint of halved grape tomatoes and a smidge of sea salt. While pasta is boiling, add a bit of the pasta water to the tomato mixture. Let mixture simmer for a few so the tomatoes get nice and soft. Coarsley chop a bunch of basil. Once pasta is done, combine the pasta, tomato mixture, basil, and oodles of shredded mozzarella in a large bowl. Mmmmm. It's a favorite and a definite staple in my household. I like to sprinkle a little pecorino romano cheese on top before I dig in.

Loverleee tomatoe! My MUm has a great recipe for tomatoe chutney...I'll see if I can sneak if away :)x
